(WJHL) – What’s Thanksgiving without the cranberry sauce? Registered dietitian Carol Carter joined News Channel 11 at Noon with a diabetic-friendly recipe. Not only that, she revealed a sandwich spread that will enhance the flavor of those leftover turkey sandwiches.
Sugar-Free Cranberry Sauce
1 bag fresh cranberries (12 ounces)
Sugar substitute equal to 1 cup of sugar (24 packets)
1 cup water
1/2 teaspoon grated orange rind (optional)
1/4 teaspoon salt
Put cranberries in a pot on the stove and pick through to remove soft and/or brown berries.
Add other ingredients.
Stir and bring to boil on medium-high heat.
The cranberries will pop and release their gel. The sauce will come together like magic.
Cook until the sauce is the consistency you want, about 5 to 10 minutes.
Trendy Low-Carb Cranberry Mayo Sandwich Spread
1/2 cup regular mayonnaise
3 Tablespoons low-carb cranberry sauce (see recipe above)
1/4 teaspoon lemon juice (optional)
Salt & pepper to taste.
Mix all ingredients in a small bowl. Use on turkey sandwiches, burgers, or bacon, lettuce & tomato sandwiches.
