40-Calorie, Diabetic-friendly brownies recipe

Carol Carter of the Wellmont Diabetes Treatment Center joined us to share a recipe for 40-calorie brownies that people with Diabetes can still enjoy:

¾ cup nonfat Vanilla Greek Yogurt

¼ cup skim milk

½ cup cocoa powder

½ cup Old fashion rolled oats

½ cup artificial sweetener

1 egg

1/3 cup unsweetened applesauce

1 teaspoon baking powder

1 pinch salt

Preheat oven to 400 degrees

Grease 8”X 8” square pan

Combine all ingredients into a food processor or blender, and blend until smooth.

Pour into the greased pan.

Bake about 15 minutes.

Allow to cool and cut into 9 pieces
