8 large cauliflower florets
1 cup buttermilk
1/2 cup AP Flour
1 1/2 teaspoons Cajun seasoning
1/2 teaspoon iodized salt
Combine all ingredients & process until smooth.
2 cups AP Flour
6-8 cups frying oil heated to 350 degrees
Toss cauliflower florets in batter, cover and rest for 4 hours. Remove florets from batter, dredge heavily in flour, shake to remove excess & place on a baking sheet to rest for 5-10 minutes, or until batter shows through the first dredging. Dredge florets in flour again and carefully drop into hot oil. Rotate the florets with a spoon while frying to insure even cooking. Cook 3-4 minutes or until florets rise to the surface of the oil. Remove florets from oil, rest for 1 minute. Serve with tzatziki or sriracha.
